Home grown sprouts v the ones in organic veg boxes

After all the hoohaa of the last few weeks dies down some of us are left wondering if our home grown sprouts are really safe to eat. It always seemed slightly dodgy to me to grow something in conditions that so closely mimic a petri dish and not risk growing other less friendly things in there too.

Update from the UK Food Standards Agency:

Since I wrote this post there has been an update from the FSA (July 1st 2011)

Sprouted seeds should only be eaten if they have been cooked thoroughly until steaming hot throughout; they should not be eaten raw.

It goes on to say:

The European Food Safety Authority (EFSA) and the European Centre for Disease Prevention and Control (ECDC) have potentially linked the outbreaks in France and Germany to fenugreek seeds.

and goes on to say:

The Food Standards Agency is continuing to work with the Health Protection Agency to investigate possible links between a UK company and the outbreak in France. Samples of the implicated seeds (fenugreek, rocket, and mustard) from the company are being tested for E. coli O104:H4. Once the full set of test results are returned, the Agency will make these available.

They also say:

The EFSA and ECDC summary concludes that ‘because fenugreek seeds are often sold as mixes of seeds and that during re-packaging cross-contamination cannot be excluded pending outcome of the epidemiological investigation under way, consumers should be advised to ensure that all types of sprouts are thoroughly cooked before consumption’. (my emphasis)

Sprouts are not just tasty they are really good for you. There is lots of evidence that eating sprouts has health benefits so cooking them or even not eating them are not options I want to consider. But it is possible I might have to cook them from now on.

Are sprouts safe?

One of the things I’ve discovered is that commercial sprout growers sterilise their seeds first before they start and then keep them in totally sterile environments. I’ve got to confess I’ve never done that. Worse still I’ve sprouted all sorts of things (like dried lentils) that were never intended to be sprouted. I tended to think that the packets of sprouting seeds were a bit of a con. Now I know they are more expensive because they are treated to avoid contamination. Ooops!

It seems that problems can arise when:

They are handled by anyone with uncertain hygiene

The water they are rinsed in is anything less than drinking quality

Un-germinated seeds or seed cases are not removed and start to decay

Sprouts are allowed to form clumps making it harder to remove debris

The environment they are grown in is open to insect or bird contamination.

Growing sprouts at home

Now, I don’t know about you, but, clean as our kitchen is, it certainly is not a ‘sterile environment’. I am careful about washing my hands before handling food.

I always try to rinse sprouts 3 or 4 times a day but I have to admit to occasionally forgetting. Also I’m not sure I always get them as dry as they should really be after rinsing. It can be hard too to spread them out properly after they’ve started to sprout.

What with that and my slap dash attitude to what I was sprouting I’m starting to think we’ve been quite lucky!

Commercially grown sprouts

On the Riverford web site they say:

Brett Kellett who grows our beansprouts grows in very small batches which are constantly turned and flushed with water.

Beansprouts are the only crop that Brett grows and the whole process takes place indoors. It is more of a hygienic factory type environment than that of a farm. The young sprouts obtain all the energy they need for growth from the seed, naturally reserved there by its mother plant. Hence, no fertiliser or manure is needed or used.

Brett sterilises all of his seed, before germination. To ensure his hygiene standards are effective, he tests every batch of his product for the presence of bacteria, guaranteeing they are perfectly safe and healthy to eat. There are reports that two of the staff at the German farm had previously suffered E. coli and it is possible that these staff infected the crop. Brett has only a couple of employees, who are fully aware of UK legislation that food handlers must inform their manager and not report to work if they have food poisoning symptoms (not that any of them ever have had).

This sounds wonderfully reassuring. An open and transparent response to people’s worries. Having read this I’m happy. We’ll keep adding a box or two of sprouts to our organic veg boxes and the sprouting pots will have to find a new use.

Note – our latest box came with a sticker passing on the FSA advice to cook them thoroughly before eating.

So – Are sprouts safe?

The answer to the original question seems to be “Yes, sprouts are safe but be sure you trust your supplier” Er, No, see updated answer below

A more up to date answer:

“Yes sprouts are safe if you cook them until steaming.”

Today we have a guest post from Tom Howlett explaining just why we should all think about just who we buy our veg box from.

If you are looking for a veg box you have to make, what I believe to be one fundamental choice. Do you find a small local scheme or go for one of the 2 larger national companies.

Britain is becoming dominated by 2 large national veg box schemes (Riverford and Able and Cole). They do an amazing job of combining the benefits of a local veg box with real convenience. They make veg boxes more easily consumable by providing recipe cards and making videos of how to prepare the more unusual weirdly shapes things you’ll find lurking at the bottom of your box. They have done a great job of bringing veg boxes to the masses through their funky marketing. They provide a huge range of products and you can change your order online. But I don’t think they are the real deal. Here’s why.

We don’t just choose a veg box for the fantastically fresh seasonal produce. A local veg box connects us with our local farmers. Our hard-earned cash isn’t filling the pockets rich businessmen, it’s helping local people earn an honest living from the land.

Many local veg box scheme’s purity means they include a more limited range of produce then the national schemes. The ever-changing seasons mean we are delivered an ever-changing variety of vegetables. On good days we discover fantastic new recipes. On bad days we struggle to find a use for 3 swedes and a beetroot. All year round we are challenged to find recipes for a new seasons produce; its part of the fun and help us regain our connection with the cyclic nature of our environment.

Buying veg boxes online

What about convenience? If you want to change your order with a local scheme you usually need to make a telephone call, although more personal, it’s easy to forget and at times it can go wrong. The large schemes spend 1000′s on online systems that allow customers to change their order week by week, encouraging them to buy more and giving the company the opportunity to sell a wider range of produce and provide a viable more ethical alternative to a supermarket shop. At From Where It’s Grown we are providing local veg box schemes with solutions that match the sophistication of the big 2′s systems for a small monthly fee.

So if you are faced with this choice do at least find out about and give your local veg box scheme a try. If they don’t offer what you are looking for tell them what the need to do to win your custom, I think they will appreciate your candour. Local veg box schemes are a unique type of business. They are driven by beliefs not money, They deserve our support.

So there you are, will you think really local when it comes to buying your veg box?

Have you seen the series of videos from Riverford called What’s What in The Box ? They’re very good. Sometimes it’s one of the cooks from the field kitchen or the head chef, or one of the growers or Guy himself. There’s always something useful you can learn about what’s in the organic vegetable boxes by watching the videos and they seem very natural and well put together. I hope they manage to keep up producing a new one every week for us, because in some ways it’s the topical nature of the information that is so useful. Just when a new vegetable starts turning up in the organic boxes, and you might think you already know all about it and what you can do with them, a new tip gets included that just might help save some time or enable the cook in your house to make the absolute best out of the lovely top quality and healthly looking organic vegetables that come from Riverford.

If you ever wondered how long your organic veg box is going to keep for, I just got a chance to find out when I accidentally ordered two boxes instead of one. I was trying to be clever and get the alternate weeks for different types of veg box plan setup but I got it wrong and ended up with two enormous roots and greens boxes. So I cancelled any delivery for the following week and made a resolution not to eat out until the bulk of the two organic vegetable boxes had been mostly used up.

So I had in my vegetable racks and fridge:

Two sacks of lovely potatoes.

Two enormous cauliflowers

Enough broccoli to sink a battleship

Just the right amount of onions, probably

Half a field of carrots

Lots of lovely lovely leeks

A couple of nice dark green cabbages

I may have forgotten something but if so, I’m sure it was delicious

Now then, Riverford claim about the roots and greens box “The veg has a good shelf life, so if you’re feeling extra thrifty try a fortnightly delivery.” which is what I effectively had to cope with. I chose to cook one of the cauliflowers first, grated some carrots for a salad and started to munch my way through the broccoli. Potatoes keep for weeks in the dark so I didn’t worry about them too much. After the end of teh first week I could see an of the two boxes end in sight. The second cauliflower had developed a mouldy patch but only in one isolated segment, the rest was fine. The carrots were in extraordinarily good condition. Supermarket carrots go limp after a couple of days when kept out in a room with variable temperature but these were still crisp and juicy. The leeks lasted well two. No need to peel away several layers of yellow leaves, just trim the ends a little bit.

This post divides quite neatly into 2 sections. Part 1 is all about making sure your delivery doesn’t arrive at your home address. Part 2 addresses getting organic food at your UK holiday destination.

Canceling Your Organic Box for the Holidays

Most organic box schemes have quite straight forward ways of canceling your box for short periods.

Riverford

You can cancel up to 4 orders in a row online through ‘my future orders’ on the web site or by contacting your local distributor.

If you are going away for more than 4 weeks, you can either remove your regular order via the ‘my regular order’ page or contact your local distributor with the dates that you will not need deliveries. Make sure you also remove any one off orders you may have made from the ‘my future orders’ page.

Please remember that we need two working days notice before your delivery day to amend or cancel orders. You will need to phone or email your local distributor by 5pm, or by 8pm if you go online to make the changes.

Abel and Cole

Log in and go to My Account.

Click on the ‘my holidays’ section.

Enter all the dates when you don’t want a delivery – you might not want one the day before you go away, so you’ll need to include this date.

To add dates simply click on the calendar that appears.

Farmaround

Give them a minimum of 2 working days notice

They will suspend deliveries for any length of time that’s convenient for you.

You can do this using their ‘suspend order form’ on the web site or contact them by phone (If you do the latter, please remember to state the date that you want your last order to arrive and the date that you want to resume your deliveries.)

My Organic Box Sits in The Sun All Day

My organic box comes full of lovely, fresh organic vegetables but often I’m out when it arrives.
The front of my house gets the afternoon sun and this is bad news for my veggies! Even if I had a fairly shady spot on those sultry hot London days we sometimes get I could still have a problem.
Riverford have done some interesting work on the problem and spent a considerable amount of time last year experimenting with solutions. They even got Exeter Uni involved to see what percentage of the year temperatures might be a problem for the shelf life of the various vegetables.

How Do You Keep Your Organic Box Cool?

Riverford have come up with a couple of interesting solutions. They tried all sorts of methods but the two best (short of having a hole in the ground to pop the box in!) were using an ‘eco-cool blanket’ or building a rather charming cold store cupboard/planter.

The Eco Cool Blanket

This is a wonderfully hitech solution. You buy a purpose made cover which keeps your organic boxes up to 5°C cooler and keeps the box dry if the problem is summer rain rather than blazing sunshine.
You pop the blanket inside your previous week’s box which you are returning and your delivery driver covers your new box with it.
The eco-cool blanket is elasticated, fits even the largest box, looks very much like the sort of thing people wrap themselves in at the end of the marathon and costs £4.25

Eco-Cool Food Safe

This is a much more attractive solution but costs quite a lot more. Riverford says:

a wooden safe that encases your veg box in a layer of compost and soil, ensuring that any produce put inside stays up to 10 degrees cooler than if just left on a doorstep.

Not only that but it looks really attractive once it’s filled with plants:

How does it work?
1.	The safe has a high thermal capacity and captures the cool of the night to preserve your veg through the day
2.	Water evaporating from it gives an extra cooling effect, like putting a damp towel over a barrel of beer
3.	When filled with soil and compost and locked, it’s so heavy that no-one can make off with your veg box while you’re out

The Eco-Cool Food Safe comes in 3 sizes, is delivered in a flat pack and costs between £69 and £74.

Low Tech Solutions to Hot Organic Boxes

Much though I like the Eco-Cool Food Safe I’m an old hippy at heart and that food safe looks pretty easy to copy. What I’m thinking is two wine crates for the sides and a wooden shelf for the top. Pop a window box planter (wooden) on top, fill with soil and plants. An old cupboard door could be added and the whole lot painted with a chalky mix of emulsion and water to give a shabby chic white or maybe a chippy pale blue. (This might just be my Shabby Chic obsession talking!) Stand it against a wall, ideally somewhere that gets a bit of shade and your organic boxes are going to stay nice and cool on the hottest day (or dry when it does the other thing!)

It would be a little taller than the smallest bought one but that should make it easier to get your organic boxes out again.

Riverford Organics, which delivers 40,000 boxes around England every week, compares its produce monthly against its equivalents in Sainsbury’s, Tesco and Waitrose. Riverford claim that their organic boxes turn out to be at least 20 per cent cheaper. So I did a spot check and that week the Riverford’s large organic eggs were costing £2.05 for half a dozen whereas in Tesco they were £2.13 and in up market Waitrose £2.24. Riverford’s sales overall are on the increase despise the recession.

Supermarkets now sell more than 70 per cent of organic produce in the UK — but, having done well in the organic boom, they are now bearing the brunt of the decline. According to Soil Association surveys, it is “barcode” sales of organic that are falling. Farmers’ markets, farm shops and box schemes are still all doing OK.

Riverford Field Kitchen ‘Best Ethical Restaurant’ Observer

In their monthly food awards, the Observer newspaper gave the Riverford Field Kitchen the title “Best Ethical Restaurant. Last week Jane Baxter and Sam Miller, who run the Riverford Field Kitchen, were presented with this prestigious award, a fine achievement given some notable contenders.

Guy Watson of Riverford writes in Farm news:

I like to think that we won because, as well as serving the most fantastic and affordable food, mostly grown on the farm, we are the real thing; for 25 years we have been doing what we do, in the belief that great food and sane farming can withstand the ebb and flow of food fashions. Having spent the last few days in London I took the opportunity to look at a few markets, greengrocers and box schemes. It was disappointing to see how many were responding to the recession by trading down to selling uncertified “as good as organic” produce, often with packaging and vans still implying fully organic produce. Everything we sell is certified organic; we keep it affordable by growing ourselves and working closely with our co-op.

Congratulations to Riverford Organic Vegetables, who also happen to be our own suppliers of top quality organic boxes all through the winter spring gap.

If you look at the Organic Vegetable Boxes with delivery schemes available nationally, two or three large suppliers are mostly visible. Riverford, Abel & Cole and Farmaround for a start, all cover large parts of the country with excellent organic vegetable boxes delivered. If at all possible though, it’s clearly better for everybody and the environment if locallly grown vegetables can be delivered to doorsteps minimising transport energy, storage time and food miles.

Ethical Superstore have recently introduced a system to provide a small range of local organic veg box schemes as a trial, with an additional national vegetable delivery scheme to cover most of the remaining areas of the mainland UK.
